1. Clean shrimp then cook for 2 to 3 minutes or just long enough to turn pink.
  2. Drain and put into covered bowl with lemon juice.
  3. Leave covered for 1 hour stirring two or three times.
  4. Drain and discard the liquid.
  5. Combine shrimp with remaining ingredients.
  6. Mix well, put into refrigerator for 1½ hours.
  7. Also, a half of avocado can be added to mix for variety.
